Analysis of flour quality

To check the quality of flour, we conduct the following analyses:
  • Linen: Determination of color characteristics of flour.
  • Gluten: Evaluation of gluten content and quality (manual and hardware using glutomat).
  • IDK (Gluten Deformation Index): Determining the elasticity and strength of gluten.
  • Moisture: Measurement of moisture content in flour.
  • Residue on the sieve: Determining the size of the flour grains.
  • Falling number (FR): Estimation of enzyme activity in flour.

Analysis of wheat grain quality:

Our laboratory also carries out a thorough analysis of grain (wheat):
  • Nature: Evaluation of grain mass.
  • Moisture: Measurement of moisture content in grain.
  • IDK (Gluten Deformation Index): Determination of elasticity and strength of gluten.
  • Falling number: Assessment of enzyme activity in grain.
  • Sifting through sieves of different grain sizes: Selection of weak, broken grains, grains from beetles, and other impurities.
  • Vitrification: Determination of the proportion of glassy grains in the total mass.
  • Gluten: assessment of gluten content and quality (manual and hardware, with protein).
  • Protein – measurement of protein content in grain.
  • Weediness — determination of the amount of garbage and grain impurities.

Analysis of the quality of pasta products:

  • Chemical indicators: Determination of moisture content, acidity, protein.
  • Physical indicators: Determination of the amount of scrap, deformed products and crumbs.
  • Organoleptic indicators: Evaluation of the appearance, taste, smell and consistency of pasta products.

Flour Quality Analysis

Our laboratory conducts comprehensive flour quality analyses, focusing on several key indicators. We measure the flour’s whiteness, which determines its color characteristics, and assess the gluten content and quality using both manual and instrumental methods. An important parameter is the Gluten Deformation Index (GDI), which reflects the elasticity and strength of the gluten. We also measure the flour’s moisture content, sieve residue, and falling number (FN), which indicates enzyme activity. These parameters ensure that our flour meets our clients’ quality requirements consistently.

Grain Quality Analysis

The quality of wheat grain is another crucial aspect of our work. Our laboratory analyzes the grain’s mass (test weight) and moisture content. We evaluate the GDI, FN, and perform sieving to remove broken grains and impurities. We also assess the proportion of vitreous grains, protein content, and the grain’s sorting, which includes identifying foreign impurities. These analyses help ensure the high quality of the raw materials used in our flour and pasta production.

Pasta Quality Analysis

Our pasta products undergo thorough quality control in our laboratory. We check the chemical indicators, such as moisture content, acidity, and protein levels. Physical indicators include the amount of broken, deformed products and crumbs. Organoleptic indicators evaluate the pasta’s appearance, taste, smell, and texture.
